In that situation, I find operations on one huge file run at the NVMe access speed while huge operations on thousands of tiny files run much slower in part because the interaction triggers stuff that hits the OS and the OS accesses the microSD card. It varies based on the software used, operation, and the available memory.
Which NVMe adaptor? Some are limited to PCIe 2 by the adaptor hardware.
