If you're routing the DAC's power from a linear regulator, and that causes a measurable difference , then the filtering on the DAC's input to internal supplies is inadequate.
That may be true, nevertheless some Audio hats provide the ability to segregate analog from digital power nets. In that case it can't hurt to power the analog section using a linear regulator. It may compensate some for imperfect filtering. There is no benefit in powering the digital stuff, including the Pi itself, with a linear regulator.

Indeed a Pi5 may be overkill. I run mine on a Pi3b with Innomaker Allo Katana clone (uses 2 channel ES9038Q2M).
