General discussion • Pi 5 + NVMe SSD as server?

Hi all!
I am very new to the Pi experience, got myself a used Pi 3 a few months which I currently run RetroPie on which has been fun. The Linux experience is a big plus. I have had several different installations just to try what is out there.

I have been thinking of getting a Mini PC as a Linux server to run various long running processes. It would have at least MariaDB installed and do simpler text processing (web scraping). There would probably be more tasks but the initial setup would be that.
The loads wouldn't be crazy but again, difficult to plan for the future since I might find other uses for it besides this.
A strong argument for using Pi is the low power consumption.

I would like to bypass the SDHC card altogether so:
My question is this, given that NVMe SSD is supported and you can boot from the SSD I would like to hear from you how stable that is. I've read topics on this that some users have problems and it seems to be a power issue. The power supplied via the flat cable for the SSD just isn't enough for some setups if I am correctly informed.
I haven't gotten a good grasp on this since people having not problems usually don't create a forum topic on the subject and just announce "Works well for me."

Any thought on all this?
