The Raspberry icons (one for each CPU core) are built into the kernel. You can rebuild the kernel with a different icon in. The default for Linux is actually the penguin "Tux". Raspberry Pi have customised their kernel with their own image.
Instructions for modifying the Raspberry Pi kernel are here, and a quick net search on "Linux kernel boot logo" should find instructions on how to create a custom icon file and where to put it in the kernel source.
