Is this a product or a concept of a web server deployment on a RPI?I was using NextCloud on my webspace, and I love NextCloud but when using it on your webspace, you don't have enough permissions to configure or fix everything. So I want to try running my own server with NextCloud, if I'm correct, that's not too difficult.

I'm self-employed and I would use the agenda, booking app and contact app from nextcloud, so it has to be quite stable and safe, I cannot afford serious outages.
No insult intended, but by your own admission of "I'm a beginner Linux-user" you don't have the experience yet to administer a high available deployment.
I can't state on whether or not if one of the RPI's will support your deployment needs in terms of CPU and memory resources. It sounds like you also need an external hard drive/SSD for your business critical data. You may want to look at RAID for that.
